How can a political party calling for the abolition of the filibuster, the federalization of elections, packing the Supreme Court & the reconfiguration of the Senate, while advocating for policies coercing people into making certain medical decisions say that they are interested in protecting democracy?

Indeed. The entire narrative that the GOP, particularly Trump and his supporters, are some kind of existential threat on our democracy is another "Big Lie" of the Democrats and the left in general. Typical leftist projection.
